Sweet Potato Fries

This year we discovered these luscious purple Okinawa sweet potatoes and fell in love with them. When ever we find them in the market we find a fun way to cook them and this is perfect for the grilling days when we are having our most delicious burger more often.

They are so easy to make and remember to use some delicious rich grassfed animal fat so that you get your omega-3 is and feed your beautiful brain, nervous system and skin the nourishment they need to get through the summer!

Ingredients:

  • 2 or 3 sweet potatoes

  • grassfed tallow (I used lamb fat in the photos)

  • salt to finish

1- Heat the over to 400 degrees

2- Slice potatoes into fries size pieces and place on a baking tray. Rub them all over with fat.

3- Bake for 15 minutes in the hot oven. Take the tray out and turn the fries once and bake again for 10 or 15 more minutes until fragrant and browned.

4- Plate and sprinkle with your favorite salt. Shown in the photo with duck egg and avocado oil mayo. I'll try to get that recipe to you soon... enjoy!
