Strawberry Radish Salsa

Strawberry season is upon us! We have been experimenting with salsas with out nightshades and this recipe is one that I have been making with radishes, but with the enhancement of the tart, sweet floral nature of strawberries is delicious when we have our carne asada. The ground cumin can be added straight unroasted, but I like the richness that roasting adds to the flavor of cumin in this recipe. Don’t forget a side of guacamole and taro tortillas to complete this meal.

Save the pint box from the strawberries to measure out your vegetables.

Ingredients:

  • 1 pint of smallish red radishes

  • 1/2 pint of strawberries

  • 5 or 6 sprigs of cilantro

  • 2 or 3 spring onions

  • 1 teaspoon ground cumin

  • 1/2 teaspoon of salt

  • 1/2 teaspoon

  • a squeeze of lime (1/4 lime)

Directions:

1:  Cube the radishes and strawberries.

2:  Finely chop the cilantro and spring onions

3:  Mix all the ingredients together in a bowl. It tastes better as the tastes blend in about 10 minutes, so feel free to prepare it before you do the other cooking.
