Now that diva and Persian cucumbers are in season cucumber recipes are coming back out to cool us: thai cucumber salad, cucumber raita, squid soup with cucumber. This recipe jumped out at me the other day when I made ground lamb kabobs and it was a perfect fit. There is dill in the market these days and this is a perfect way to pair it with cucumber. Its cool, fragrant and refreshing.
- 1 cup of goat kefir or yoghurt
- 3 medium Persian cucumbers.
- 1 clove garlic, minced
- 1 shallot, finely sliced
- 1/4 cup fresh dill finely chopped
- 1 teaspoon salt
- 1 teaspoon pepper
In a medium bowl, stir together the yogurt, cucumbers, garlic, dill and shallot. Season salt and pepper. Refrigerate for at least 1 hour to blend flavors.
