Spring Asparagus

When asparagus arrives in the spring at the famers market I am in heaven. The first way I love to cook it is the most simple way I know! Its so fresh and lovely it doesn’t need anything but a sprinkle of salt, olive oil and a bit of lemon if you like. Asparagus season is upon us!

Never cut the ends of asparagus, always snap the end off to get the tough end off.


  • 1 lb of asparagus rinsed (ends snapped off)
  • salt
  • olive oil
  • lemon


1: Heat an iron skillet or pan to high heat. Water will sizzle when sprinkled on it.Toss the asparagus onto the pan and allow to sear for about one minute.

2: Add a few tablespoons of water to the pan to steam quickly for another minute

3: Plate and drizzle with olive oil, sprinkle with salt and a squeeze of lemon. A perfect side all spring long
